Last month I had big news with the release of the TM7 – the brand new Thermomix model. I want to take a moment to remind you that the TM6 continues to be an amazing piece of kit! There are still tons of recipes available on Cookidoo, and you can do so much with the machine, and so much more on top of that if you have accessories like the Spiralizer or Sensor. Just like Apple brings out a new model of iPhone periodically, Thermomix has brought out the TM7. We might not be officially in springtime yet, but the sun is streaming through the window as I write this, and there are signs of spring popping up all over the place, so I think it’s definitely OK to start thinking about seasonal produce now: spring greens! Here are a few ways you can make the most of your Thermomix when it comes to vibrant greens:

✅ Blanch Your Greens for Vibrant Colour & Flavour
Blanching (briefly boiling, then cooling in ice water) locks in the bright green colour of veggies like spinach, kale, and tenderstem broccoli. It also softens tougher leaves, removes bitterness, and helps preserve nutrients. Use your Varoma or simmering basket for easy, perfectly timed blanching in the TM6.

✅ Pesto on Repeat
Your TM6 makes whipping up fresh pesto effortless. Swap traditional basil for seasonal greens like wild garlic, rocket, or watercress for a bold, peppery twist. Great for pastas, salads, or sandwiches.

✅ Green Smoothies, the Easy Way
Tough greens like kale and spinach can make smoothies gritty—but not with the TM6. Its powerful blades blitz everything to silky smooth perfection. Add a handful of greens to your morning smoothie for an easy nutrient boost.

✅ Sous-vide Asparagus
Spring asparagus shines when cooked gently. Use the sous-vide mode at 85°C for 15 minutes with olive oil and a pinch of salt to keep it tender, juicy, and full of flavour.

Other seasonal veg includes asparagus, wild garlic, spring onions, radishes, watercress, spinach, tenderstem broccoli, new potatoes, leeks, purple sprouting broccoli, rhubarb, sorrel, lettuce, chard, peas, broad beans, rocket, mint, and parsley. With so many fresh, seasonal vegetables to choose from, where to start 🤔I know – Spring Pea & Mint Soup! We’re moving away from winter warmer soups, and this one is light, refreshing and incredibly tasty.

We all know that lamb is everywhere at this time of year so I couldn’t not feature a recipe. There is of course roast lamb, but if you fancy something a little different, the Lamb and Feta Meatballs are delicious!

The Green Bean Pizza is a unique twist on traditional pizza, featuring tender green beans on a crisp base. A fresh and vibrant flavour that’s ideal for the season.

One last thing, let’s talk Pesto! This is one of life’s amazing additions to so many meals, and I’ve already mentioned that you can switch out the usual basil for other spring vegetables.
