March always feels like a turning point, doesn’t it? Lighter evenings, a bit more energy, and suddenly we’re craving fresher food instead of winter stews.

This month I’m talking about making the most of spring ingredients. With fresh produce, a great way of cooking is by steaming in the Varoma, and that’s why I’m giving the Varoma its own feature. Too many of my owners admit that it’s been quietly tucked away in a cupboard. I’ll give you the inspiration and know-how to get it working hard for you.

Five Ways to Use Your Varoma This Spring

The Varoma can be one of the most underused parts of the Thermomix yet in spring, it’s brilliant.

Here are some simple ways to make it work harder for you:

1️⃣ Steam Fish & Greens Together

Place salmon or cod fillets in the Varoma tray, asparagus or tenderstem broccoli on top, and cook new potatoes or grains in the bowl below. Try Salmon and Hollandaise sauce for a dinner cooked in layers; no juggling pans; no extra washing up.

2️⃣ Cook a Full Layered Meal

Sauce or stock in the bowl.
Rice or potatoes in the simmering basket.
Chicken, fish or veg in the Varoma.

Chicken Teriyaki and Rice is a layered meal ideal for busy weeknights.

3️⃣ Keep Spring Veg Vibrant

Steam Asparagusgreen beans and peas and keep their colour, texture and flavour exactly as they should be.

4️⃣ Prep Protein for the Week

Steam chicken breasts, then shred for wraps, salads, pies or pasta dishes.
It’s a lighter way to cook and perfect for batch prep.

5️⃣ Don’t Forget Sweet Treats

The Varoma isn’t just for savoury. It’s fantastic for bao buns, dumplings and even light sponge puddings like a Steamed Lemon Cake.

If you’re using the TM7, the improved temperature precision and sensor-guided cooking make layered meals even more reliable — but everything above works beautifully on the TM6 too.

If your Varoma has been sitting at the back of the cupboard, this is your sign to bring it forward again.

There’s lots of fresh produce coming in that it would be a shame not to highlight. These all make for tasty and lighter meals. All the recipes are available on Cookidoo – the recipe platform used by Thermomix – and suitable for both the TM6 and the TM7.

While there’s still a nip in the air, you might want a hearty meal still but with fresh flavours. Spring Vegetable Penne is filling as well as perfect for enjoying mixed greens and herbs. You can ease slowly away from wintery meals with the Lamb and Apricot Tagine, lighter than a winter stew but still a warming, filling meal.

For a zesty, lighter dish, try the Lemon Chicken with Cous Cous and Artichokes followed by a Rhubarb Crumble, a rather British and yummy spring pudding.

With Easter round the corner, I do also have to mention Hot Cross Buns! Whether you have them toasted and buttered or as they are, they’re the perfect sweet treat right now.
